Finding Calm in Chaos: Lessons from Living Through a Remodel
For the past few months, my husband and I—along with our two dogs—have been living and working through a home remodel. I never imagined that updating our kitchen and flooring would cause such a massive disruption to our daily routine. I think it’s been the universe’s way of reminding me to be patient, adaptable, and—most importantly—to let go.
Not having a kitchen sink for a few weeks has certainly been a challenge! I used two plastic wash tubs from Gordon Food Service that I had for my cooking classes: one for dirty dishes and the other for clean dishes to dry after washing them in the bathroom sink. It’s not conventional but it gets the job done!
Without a full kitchen, a few key countertop appliances have become lifesavers. The Instant Pot has been my go-to appliance for quickly steaming vegetables like corn on the cob, beets, potatoes, and green beans. I’ve even used it to make pasta! It’s fast, efficient, and only requires a cup or so of water.
My workhorse for main dishes has been the induction cooker. First, I saute onions and garlic (and mushrooms if I have them). Next I add whatever vegetables are on hand, such as peppers, carrots, squash, celery, fresh tomatoes, and leafy greens like kale, beet greens, and celery leaves. For a quick flavor enhancer I chop up stuffed grape leaves (I get these from Costco). They add a vibrant, rich flavor profile so good I barely need extra spices! Add a can of beans (chickpeas are my current favorite). Finally, place the cooked veggies and beans on a bed of steamed potatoes or cooked grains (usually made ahead).
Another lesson was learning to let go of my plans to preserve vegetables and harvest elderberries this summer. I’m hoping the birds or other wildlife reap the benefits of our loss.
There were bright spots in the chaos. We boarded the dogs to keep them safe during the most disruptive part of the renovation: the flooring installation. What felt inconvenient at first became a welcome respite that allowed us to hike in nature preserves that don't allow pets and to explore plant-based friendly restaurants without time constraints. I look forward to getting my house back in order, and I plan to hold on to the lessons this disorder has reinforced for me: be adaptable, be patient, and let go of what you can’t control.
